Any nice recipes for the salads, made in quantity and keptin a jar in the fridge for about a month - usually with a vinegar base - please

Well, maybe a couple of weeks - there is a bean salad and also a cabbage one I believe

I assume the OP perhaps means salad dressings as they ask for ones with a vinegar base.

No no, not the dressings but the actual salads - I have now found a marinated carrot salad (says will keep a few weeks), a coleslaw type one and also a bean salad.Anyone else any recipes - it is for when family comes to visit and we are out a lot - handy to have a few salads 'ready'.....

try this one!
cut up 6 Zucchini and 2 large onions and a red pepper or two
sprinkle with couple tabs salt and cover with water and stand 3-4hours then drain.
cook up a 18oz bag of small pasta till just done and drain.
Add with the drained veges to a large pan.
Add 4 cups sugar
4cups white vinegar, 1tspn celery seed and 1 tspn tumeric and 1 tspn of mustard. Bring to boil, stir to dissolve sugar and remove pan from heat. can stir through can of kidney beans if like.
place into jars(clean, heated in oven)lid, and allow to cool. store in the fridge for up to 6 weeks!very handy and very tasty!!

I guess they are so vilely awful, that they need to last in the fridge for a month because no one will actually eat them.

Good tasting food will be gone in hours.

What would you eat such a 'salad' with anyway - bread or ice cream?

Not sure about a typo prawn_whiskas - fisher just posted a recipe called "Marge’s Curried Cucumber Pickle" which has 6 medium cucumbers, 3 ¼ cups white vinegar, 3 onions, 2 cups sugar, 3 red peppers .... and some more stuff ...

Seems that a lot of people think of salads or pickles as sweets nowadays?

14 day coleslaw.

i lge finely shredded cabbage
2 grated carrots
1 lge finely diced/chopped onion
finely sliced celery - 3-4 stalks

Dressing:
1 & 1/4 cups of white vinegar
1/2 cup of water
1 cup of sugar
1 teaspoon celery seeds
1 & 1/2 teaspoons mustard seeds
1 & 1/2 teaspoon salt
1/2 teaspoon turmeric

Bring to a boil, simmer 5 minutes
Cool & poor over coleslaw. keeps for 14 days in an airtight container in the fridge.
A firend who lives alone says it keeps and tastes just as good at 1 mnth.

It is a very yummy slaw.
I also had trouble finding celery seeds, so substituted the seeds and salt with celery salt successfully.

Marrinated Carrot salad
5 Cups Cooked carrots [Can have them grated, circles, strips, any way you like}
2 Diced Onions
1 green pepper
1 cup sugar
1 tsp salt
1 tsp mustard
1/2 cup oil
3/4 cup White vinegar
med tin tomato soup

Mix liquards, mustard, sugar, salt together pour over rest of ingredients cover, will keep for up to six weeks if it lasts that long. Whole family loves it

Bean salad

med can of green beans med can Watties Baked Beans
med can of Butter Beans if you can get them I use frozen ones. [the ones thatare likethe green beans]
1/2 cup cider vinegar, 1 green pepper,1chopped onion, 1/2 cup salad oil
1/2 cup sugar, 3 heaped tsp sweet basil you can NOT miss this out

Mix all together LEAVE 24 HOURS before using store in jar in fridge . will keep up to 3 weeks

Rice Salad.
1 cup Brown Ricecooked
1 pkt [med]Dry Roasted Peanuts
1/4 cup sesame seeds
1 greggs packet poppy seeds
1 cup chopped celery
1 cup sultanas
1 cup currants
1/2 cup parsley & chives mixed together

mix all together
Pour dressing over
Dressing
1 cup oil;1/2 cup raisins; 1 Dessp curry Powder
1 cup cider vinegar

Heat oil in pan fry curry powder sizzle for a few seconds add raisins aand vinegar cook 5 mintuesWhizz pour over rice mixture stir well keep in fridge. mix before serving. This will keep for a long time
