Can someone help with a good chutney or relish recipes. With a bit of a glut with cucumbers at the moment thought I could use them this way. I am sure there is already a link but can not find it. thanks.

Think my mum uses one out of a Digby law book, unfortunately I dont have either the book or the recipe sorry. I do know it still has the seeds in it, actually its been awhile since I have had any.

I've found my Digby Law book so here we go..
Cucumber relish: 500g peeled, cored apples 2C malt Vinegar 500g Sugar 1tsp White pepper 2tsp Curry powder 2Tbsp Tumeric 1Tbsp salt 500g onions. minced 750g Cucumber
Mince apples and cook them in vinegar for about 5 mins. Add sugar, pepper, curry powder, tumeric, salt and minced onions. Boil until onions are soft. Peel and mince cumcumbers. Add to relish and boil for further 5 mins.Pour relish into hot,clean jars and seal.makes around 3 litres.
Before dicing the unpeeled cucumber, discard the seeds.Put the cucumber in a basin and sprinkle with salt.Barely cover with cold water and let stand overnight. Drain and rinse cucumber.Put in large saucepan with all other ingredients expect cornflour and bring to boil stirring constantly.Mix conflour with little water and stir into relish.Simmer for several minutes then pur into hot clean jars and sel. Makes about 3 litres

Cucumber Chutney:
3kg Cucumbers, peeled and sliced 1.5kg onions, halved and sliced 1Tbsp salt 250g Sultanas 1.5kg Brown Sugar 2tsp Ground ginger 1/2tsp Cayenne pepper 6C Malt Vinegar 1tsp Peppercorns 1tsp Whole allspice 1/2tsp Whole cloves
Combine cucumber and onions in bowl.Sprinkle with salt and let stand overnight. Next day drain vegetables well. In saucepan combine vegetables with sultanas, brown sugar, ginger, cayenne pepper and vinegar.Tie peppercorns, allspice and cloves in muslin and add to saucepan.Bring to boil and cook very slowly for about an hour or until thickened.Discard spice bag and pour into hot clean jars and seal. Makes about 6 litres.

Just for a change - Pickled Cucumbers (Aunt Daisy) In a small barrel or stone jar put a thin layer of salt & sugar then grape leaves. Add cucumbers (whole). Repaet till container is full. Seal well & leave 2 months.

Bread and Butter Cucmber Pickle:
6 cups of cucumber slices. 2 onions. 1 red 1 green Capsicum. Half a cup of Salt. One and a half litres of cold water. One and a half cups White vinegar. One and a half cups of Sugar. 2 teaspoons yellow mustard seeds. 1 teaspoon pickling spice. 2 teaspoons Tumeric 2 teaspoons celery seeds.
Method: Peel the cucumber and slice thinly. Onion..same thing Capsicum..De seed and core etc and chop to an average. Put that lot in a bowl..Prefer plastic or metal so long as it's stainless. Mix the salt with the water and pour over the veg. Leave for 3 hrs. Drain and roughly rinse the concoction off.
Place the rest of the stuff in a pot and simmer till sugar melts..Chuck in veg. Simmer 5 mins. Bottle in warm clean jars. Store a month Eat...Celery seeds are in short supply..I used Carraways.,,just doing a batch now.

The cucumber and red pepper relish is devine.Instead of chopping the cuc I used the blender, it made the relish runnier but it makes a lovely salad dressing.

Cucumber and Pineapple Pickle 6 long cucumbers-chopped not peeled 4 onions-chopped 1lb sugar 1 pint vinegar 1 tbsp salt juice of 1 lemon Cook all until tender,add 1 large tin crushed pineapple,then add 1 tbsp curry powder 1 dsp tumeric 3 tbsp flour all mixed with a small amount of vinegar Bring to boil,boil a few mins and bottle when cold very old recipe but still a favourite
