cucumber chutney or any ideas please?

I have lots of cucumbers to use up and cant find a recipe for a chutney ? Any other ideas please?

Cucumber Chutney (Aunt Daisy)
4lb cucumbers
4lb apples
4lb onions
1oz garlic
12oz raisins
2lb sugar
1oz cloves
1oz powdered peppercorns
1oz cayene
4oz ginger
Cut up cucumbers, sprinkle with salt & leave overnight. Pour liquid off. Cut up other fruits etc finely, mix with strained cucumber & other ingredients. cover with vinegar & boil 1 hour.

Pickled Cucumbers
In a small barrel or container, put a thin layer of salt & sugar, then grape leaves. Next put whole cucumbers (do not cut or peel). Repeat process till jar is full. Seal well & leave for 2 months.

Cucumber Relish
1lb apples
2 med peeled cucumbers
1lb onions
2oz salt
1pt vinegar (approx)
8oz sugar
1tsp cayenne.
Peel, core & slice apples. Boil in vinegar till soft. Cool. Mince cucumber & onions & discard juice. Mix well all ingredients well together when cold. Store in air tight jars.

ooOoo a friends mum makes a Mean pineapple and cucumber chutney! ! mmMmm

Noidea on the recipe thou sorry

She also makes a mean pickled cucumber ! ! using young small cucumbers

Courgette Pickle
1 kg courgettes
4 large Onions
1 red pepper (capsicum)
1 green pepper (capsicum)
½ cup plain salt
2 cups sugar (I find this a bit sweet and use 1 ½ cups aprox)
2 ½ cups white vinegar
1-cup water
2 tsp turmeric
2 tsp celery seeds
2 tsp mustard seeds
Slice vegetables finely (I use thick slice in the food processor or the “V” slicer)
Sprinkle with salt and stand for 2 hours then drain and rinse
Bring to the boil for 2 minutes all other ingredients stirring to dissolve sugar then add the vegetables return to the boil and cook gently 15 minutes bottle and seal (as you would fruit) leave for a week or so to develop flavour. Keep in fridge after opening, Nice on cold meats, or as a salad addition, or on crackers and cheese.

Can be done using young soft skin or telegraph cucumbers remove the seeds if you wish or is watery, capsicum can be omitted or use different colours. Mustard seeds can be omitted

Bread and Butter Pickle

2 litres sliced cucumbers
½ -1 litre sliced onions
½ cup plain salt
3 cups wine vinegar
2½ cups sugar
1 tbsp mustard seeds
1 tbsp celery seeds
1 tsp turmeric

halve cucumber lengthwise and remove and seeds if watery, Slice cucumbers and onions by food processor or slicer (use the thick blades especially for the onion as it becomes threads if to fine) use ice-cream containers as a measure. Combine in a large bowl and mix with salt and stand 30-60 minutes, then drain and rinse well.
In a large saucepan bring the remaining ingredients to the boil add the vegetables and return to the boil Fill jars and seal with preserving seals or in jars with vacuum lids (suitable jam jars with undamaged lids)
Refrigerate after opening

Can replace cucumber with courgettes

Cucumber and Pineapple Pickle

1x25cm cucumber
! cup drained cubed (pizza cut) or crushed pineapple
2 large onions
¾ cup sugar
1 cup wine vinegar
2 tsp salt
1 tsp curry powder
1 tsp turmeric
½ tsp celery seed
2 tsp cornflour

halve seed and dice or slice cucumber, dice the onion. Put all ingredients except cornflour into a large saucepan( I reserve a little vinegar to mix with cornflour later)
Stirring frequently bring to the boil then simmer for 15 minutesstir in the blended cornflour and cook a further 2-3 minutes , bottle
