Anyone got a tried and true recipe? I have steamed pork buns for dinner but would like something fresh and light to go with them.

Smacked Cucumber with Garlic Sauce (Fuchsia Dunlop)
2 medium cucumbers (600g approx) ½ tsp salt 1 tab finely chopped garlic ½ tsp sugar 2 tsp light soy sauce ½ tsp Chinkiang black vinegar 2 tab mild chilli oil 2 pinches roasted ground Sichuan pepper
Lay the cucumber on a chopping board and smack it hard a few times with a cleaver or a rolling pin (but don’t pulverise). Cut lengthwise into four pieces then roughly cut at an angle into 1 cm slices. Place in a bowl with the salt, mix well and set aside 10 min.
To make sauce combine all other ingredients in a small bowl.
Drain cucumber, add sauce and combine well. Serve immediately.

If you don't have all of the ingredients, just dress the cucumber with toasted sesame oil and light soy sauce.

I usually make a dressing with sesame oil, cider, vinegar, honey, soy sauce and a touch of chilli.

Yeah I don’t have Sichuan pepper so I used my Japanese shichimi seasoning

I normally cut cucumber length ways and slice them. Slice some onion (not much though). Squeeze a lemon or two in the whole lot. Let it sit for an hour or two. It goes well with hot curries.
