Jo Seager does a nice orso, pistachio lemon and parsley salad.Can post recipe if interested.
Can substitute orzo for rice and pasta most times.just adjust cooking times.

Oh god yes I do...it's fabulous stuff
1 cup orzo, Cook in plenty of boiling water until al dente. Drain well.Refresh in cold water, Drain and place in a bowl. Mix 2Tb olive oil 2Tb lemon juice 1 Tb runny honey 1/4 cup chopped parsley Toss through the pasta ReFridge 10 mins Just before serving stir through beetroot and baby peas Serve over salad leaves, just eat it like it that, or just make up your own ingredients...it's so good, just thinking about makes me die and go to heaven :-)

It's VERY similar to the food in a minute one in post 3.
2cups orzo 1 cup shelled pistachio nuts(I use a 70gm pkt from baking aisle) 1 cup chopped parsley 2 tbsp olive oil grated rind and juice of two lemons salt and freshly ground pepper
Add orzo to a large saucepan of salted boiling water.Boil til pasta istender. (7-8 minutes) Drain and rinse the pasta in cold water to wash off the salty water.Leave to cool.
When pasta is cold, place in a bowl with the pistachios, parsley, olive oil, and lemon rind and juice.toss well and season. Jo Seagar
I find this a really nice fresh light salad. whole family love it.

HOT SMOKED SALMON AND ORZO SALAD
1 cup orzo, cooked according to packet instructions 1 teaspoon flaky sea salt ½ cup fresh or frozen peas, cooked 1 tablespoon fresh chopped dill Grated rind 1 lemon ¼ cup chopped flat-leaf parsley 2-3 tablespoons extra virgin olive oil 2 tablespoons lemon juice 2 cups baby spinach leaves 200g hot-smoked salmon, broken into chunks
Place the orzo in a bowl and add the salt and freshly ground black pepper to taste. Fold through the peas, dill, lemon rind and parsley. Drizzle in the olive oil and lemon juice and gently toss everything together. Add the spinach and salmon and fold them through. Serve in bowls. You can also make it go further by adding wedges of hard boiled egg if you wish.
You only need to cook the orzo for a few minutes I add a little olive oil to the water,along with a pinch of salt. I taste with the teaspoon as it is cooking to get the right texture. You want it firmish,but that your teeth will go through it as opposed to mushy.
I drain and rinse under hot water - just to keep it hot,although you eat this warm or cold

We are having this salad for Xmas day.
Orzo and Roasted Prawn Salad
Oven roast prawns coated in olive oil for 6 minutes.Let cool.
Cook Orzo and drain.
Mix vinegarette ½ cup lemon juice ½ cup oil 2 tsp salt 1 tsp pepper and pour over orzo pasta.It will absorb all the vinegarette.
Chop spring onions, red onions, cucumber, fresh flat leaf parsley and add to orzo.Add cooled roasted prawns and toss together.
Add some feta cheese and gently toss to mix.
Serve.
This recipe has been tried and tested and is YUM.Oven roasting the prawns gives them a very rich flavour.Happy tasting.

1 and a half cups of cooked orzo pasta half cup of sun dried tomato chopped finely one packet of feta cheese broken into chunks a handful of roughly shredded basil half each of a red and green pepper half a cup of chopped spring onion
Mix all together with half a bottle of Eta yoghurt and garlic dressing.Very yummy and even better the next day
add anything else you might like as well, sometimes I put some finely chopped salami in or a chopped boiled egg.

this one of Giada's is nice ! 4 cups chicken broth 1 1/2 cups orzo 1 can chick peas, drained and rinsed 1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved 3/4 cup finely chopped red onion 1/2 cup chopped fresh basil leaves 1/4 cup chopped fresh mint leaves About 3/4 cup Red Wine Vinaigrette, recipe follows Salt and freshly ground black pepper
Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
Red Wine Vinaigrette
1/2 cup red wine vinegar 1/4 cup fresh lemon juice 2 teaspoons honey 2 teaspoons salt 3/4 teaspoon freshly ground black pepper 1 cup extra-virgin olive oil
Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
Yield: 1 3/4 cups

Type rissoni into the search area. Rissoni and orzo are the same thing. Through cooked orzo/rissoni, stir basil pesto, chopped spring onion and parmesan cheese to taste. Add a little olive oil if too thick.

Roasted cubed pumpkin Sun dried tomatoes plus 1/4 cup of the liquid Basil,parsley, flat leaf type Ozro Ground black pepper
Cook, chill and assemble by pilling onto a plater YUMMO
