I was gutted. Went up the road to see if I could find rhubarb to try this & nada. Not having much luck with finding something to bake today.

On a whim I cooked my rubarb with Palm sugar the other day. Highly recommended was quite creamy and smooth textured with that nice rubarb tartness.
