should I cook the rhubarb first or just mince it and put it into the muffins?

I'd cube it so you get nice chunks of cooked rhubarb when you eat them.

kingmole, I've just had a quick look at various muffin recipes in my extensive collection of books and all, except for one, of the rhubarb muffin recipes state to use finely sliced raw rhubarb.

microwave the rhubarb for one to two minutes first. Thats all it takes to make it soft enough to be edible in muffins.
