scones made with cream and lemonade are supposed to be really yummy! I think it is a Jo seager recipe.

Ingredients ------------------------------- ------------------------------- -------------------- 1/2 cup butter or margarine 2 cups self - rising flour 3/4 to 1 cup whipping cream* 1/4 cup butter or margarine, melted * (3/4 cup buttermilk and 1 tbsp. granulated sugar, stirred together, may be substituted for whipping cream) Method ------------------------------- ------------------------------- -------------------- Cut 1/2 cup butter into flour with a pastry blender or fork until crumbly. Add whipping cream, stirring just until until dry ingredients are moistened. Turn dough out onto a lightly floured surface, and knead lightly 3 or 4 times. Roll or pat dough to 3/4 inch thickness. Cut with a 2-inch round cutter; place biscuits on a lightly greased baking sheet. Bake at 400 degrees for 13 to 15 minutes. Brush biscuits with the 1/4 cup melted butter. Makes 1 dozen.

Scones (youwill need to halve)
4& 1/2c plain flour 4tsp cream of tartar 2tsp b/soda 1 can lemonade 30mls cream Mix all ingredients together. Turn onto a floured board, knead, cut & bake 200 - 220 until golden. Cheese - add 1c grated cheese
Crack eggs into a 250ml measuring jug then fill to the top with cream. Transfer to a bowl and beat with electic beaters for 1 minute. Add vanilla and sugar, beat 3 minutes. Fold in flour gently with wooden spoon. Spoon mix into 12 muffin tins lined with paper cases. Bake @ 180°C for approx, 15-20mins until light golden and cooked. Cool and ice with your favourite icing.

You can use it in meat gravy, make pasta with a mushroom and ham and cream sauce, add it to scrambled eggs, put it into coffee, make hot cocoa with it, pour it over breakfast cereal, whip it and eat it with some cake, mix it into your low fat yoghurt to make it taste better, make a small batch of ice cream ....
Not enough cream leftover really for all the good things you could do with it...
