This delectable dessert is sadly not in the more recent editions of edmonds... I tried it the other day but now want to make it myself and discovered it isn't in my copy!Anyone have it?You bake it in a casserole dish and it's quite light and fluffy - no cheese in sight, either.TIA.

Here you are, nunsy. It sounds suspiciously like Lemon Delicious to me.
Lemon Cheese Pudding
1 T butter 1/2 c sugar 2 T flour 1/8 t salt Rind and juice of 1 lemon 1 c milk 2 eggs
Cream butter and sugar, add flour, salt, rind and juice, then milk and egg yolks. Lastly fold in stiffly beaten egg whites. Pour into a pie dish which is standing in a pan of hot water. Bake at 160C for about 40 mins.
