Heres an easy version and done in a microwave.
Breadcrumbs5 hard boiled eggs Chopped Parsley1/2 of med. onion chopped finely Pepper1 pkt sausagemeat Combine meat etc and coat eggs, roll in breadcrumbs. Cook 3 mins on high in microwave, turn over, cook further 5 mins on med high (70%0

My hubby has never had scotch eggs....I had been promising to make him some...but you know how it is, you don't always get time.Well, at NW supermarket over weekend, they had some there...well they were yuk..not a good intro for my hubby to them at all.and well over priced too.
I will make him some...homemade is best.

I just wrap boiled eggs in sausage meat (bought in tube at supermarket) and then roll in breadcrumbs.Lightly fry in oil in pan to create golden outside and then transfer in to oven at about 170C until sausage meat cooked through.Can add herbs to breadcrumbs if you like
