Is the Icing most cafes use Ganache

I want a nice icing recipe and I have just looked through all the prev ones on here, alot of you reccommend a chocolate ganache is this what most of the cafes use iykwim nice and fluffy and not just a icing sugar, butter and cocoa one?

custom95, if it's a nice fluffy icing that you're wanting then IMO you need to use a frosting recipee.g.

Get a chunky size block of chocolate melt it and add 250g sour cream.It is soooooooooooooooooooo yummy the combo works really well together and is really quick and easy to do.Enjoy

Yes it is, sometimes I use more tho cos I can, orange chocolate is good too

you can make whipped ganache whichis fluffy, just make ganache and when it is set whip it with a paddle beater...

Hi I made the sour cream with melted chocolate, Your right it is yummy however my question now is, does it stay soft or hard? and how long does it last. can the sour cream go off?
