Coleslaw - What are your variations?

i use rice wine vinegar and lemon zest - nice and tart

Peanut Slaw

1 cup mayonnaise
1 medium clove garlic
1/2 head green cabbage
1/4 head red cabbage
1/4 cup roasted salted peanuts
1Tblsp chopped parsley
2 Tblsp aged balsamic vinegar
salt
ground black pepper to taste

Mix mayo with minced garlic and set aside
Thinly slice the nice inner cabbage leaves.
Place in large bowl with peanuts, parsley and balsamic vinegar.Add enough of the mayo to coat the slaw and season with salt and pepper to taste.Mix well.

Cabbage, grated carrot, grated cheese and tinned pineapple pieces.Eta coleslaw dressing.Really easy, and yummy.

i also like to dry roast pumpkin and sunflower seeds, i keep them as a snack and they are great to sprinkle over a serving of coleslaw.i like to add red onion or spring onions, sometimes i mix the red and green cabbage, coriander is also nice added

I've just made one with a ricotta lemon dressing - just cabbage and red onion at this stage but I might dress it with some roasted almonds when I serve it.

Green cabbage, red cabbage, carrots, lots of parsley or fresh coriander and mint bean sprouts and dress with an asian style dressing with chilli ginger etc.

cabbage,carrots, red onon, parsley , mint, and anythng else l feel like.Find the mint and parsley give a herby fresh taste.Best food mayo with sour cream added.Cheers

I always shake a tspn of curry powder through completed slaw.I use a good
mayonnaise as dressing and the curry powder binds to that - with tinned
pineapple chunks it is delicious!

I add juice of 1 lemon to the dressing and add walnuts and I am going yo try the grated apple

We just add a little grated cheese, our dressing is best foods mayo, sugar, white vinegar, mustard powder. We too eat a lot of coleslaw, so easy to make, and tasty. Only problem is now kids have got very fussy, and only like it freshly made!
