dern......My corn fritters were like rubber.I tried to make the batter without a recipe.Any good recipes out there? Help appreciated.

i dont use a recipe as such, just a tin of creamed corn, one egg, and enough self raising flour to get it to the right consistancy - fairly thick. i think the secret is to have the pan and oil very hot.

Did you add any baking powder. A lot of people add far too much flour as well.
My recipe is 1 can creamed sweetcorn (oak is my preferred brand) 1 egg, 3 or 4 tablespoons of flour 1/4 tsp of baking powder, salt and pepper. Stir well and fry in half butter half oil.
VAriations can be grated potatoe similar amout as corn and double other ingredients or grated zuccini you can also add chopped chilli. a pinch or two of curry powder is good.
