sweetcorn with heaps of extra vegs added. tuna and onion salmon and onion potato and onion, just about anything goes in a fritter.

250g cooked kumara, 250g tin of salmon - add a few chopped capers, lemon juice, smoosh it all up to a paste and then roll into balls or patties. I coat mine in rice flour as it goes crunchy and then fry gently so they don't fall apart. very tasty!
