Butter sliced bread & cut into peces. Place in a lightly greased pie or casserole dish. Sprinkle sultanas or raisins (opt) over. Beat 1 - 2 eggs add milk (depending on the size of the dish), vanilla essence & 2TBSPs sugar. Pour over & bake 1 - 1&1/2 hrs (until set) @ 160.

recipe as above but to make a little more special put jam on your bread and maybe use 3 eggs, using the white from one to make a meringue topping (beat egg white till stiff and add 2 or 3 tablesps sugar and spread over. Pudding will also be better if you make early and leavethe egg mixture to 'soak in' rather than straight into oven.

I have a great choc croissant bread and butter pudding: 4-5 croissants 2c milk 6 whole eggs 1 cup sugar vanilla pod or some vanilla extract chopped up bits of chocolate (as much or as little as you like!) handful of frozen berries (optional)
Butter dish, slice croissants and cut into cubes until level with dish. In a mixer add the eggs and sugar and mix. In a separate pot heat milk and add vanilla pod/extract until almost boiling.A bit at a time at a dash of the hot milk to the egg/sugar mixture and keep doing so until all used. Sprinkle the berries and chocolate over the croissants and add the egg/milk mixture to the croissants, let soak for a few mins. Make sure all covered in egg mixture.Bake at 170 in a waterbath for approx 45/60 mins or until cooked. The custard mixture should feel slightly springy.Serve with liquid cream - enjoy!
