I want to make a Smoked Salmon Souffle recipe from Delicious magazine but don't want to use goat's cheese. Can anyone suggest what I could use instead please ?

Any other cheese - like fake feta (made from cows milk) or similar stuff.

You need something tart and creamy, like a mixture of ricotta or quark and lemon zest.

I think that is the right combination of tart/creamy I am looking for and ricotta or quark will work better than cream cheese. Thank you once again, davidt4.
