boiled eggs mashed with a little mayonnaise on 1 side,on the other side sliced tomatoe or eggs on 1 and ham on the other,or tomatoe on 1 side and good old fashioned onion dip on the other.

Creamy Chicken And Almond Sandwiches.

850g chicken breast fillets
300g trimmed celery, sliced thinly
salt
24 slices white sandwich bread
40g toasted flaked almonds

Add the chicken to a large shallow pan of simmering water; simmer gently, uncovered, for about 15 minutes or until just cooked through. Remove the chicken from the pan, cool.

Thinly slice the chicken and chop finely, then place in a large bowl with the mayonnaise, celery and salt to taste, stir until combined.

Divide the chicken mixture among 12 bread slices; sprinkle with the almonds then top with the remaining bread slices.

Using an electric or serrated knife, remove and discard the crusts from the bread, then cut each sandwich into three fingers.

For the mayonnaise, blend or process the egg yolks, juice, salt and mustard until smooth. Add oil gradually in a thin stream while the motor is operating; blend until thick

Mayonnaise
2 egg yolks
1 tablespoon lemon juice
1 teaspoon salt
2 teaspoons Dijon mustard
250ml olive oil

NOTE: This recipe makes 36 sandwiches and can be made eight hours ahead; store sandwiches tightly wrapped in the refrigerator.

Here is my secret. and when I say secret, I don't like to tell the people who are eating them what it is.

* Pea - boil under just tender and then put into blender and turn into a paste.
On a platter of food, the colour looks fantastic - people love the taste, but don't often recognise it.

*the other thing which makes easy sandwiches [and budget wise], is luncheon chopped up with your favourite chutney. It tastes fantastic, is easy to make (because it spreads) and is inexpensive.

Mix grainy mustard with cream cheese and use together with ham.
Mix cranberry sauce and cream cheese with ham.
Cheese and onion mixed with a little hot water to spreading consistency.
Horseradish mixed with mayo and corned silverside.
Have tried pureed pea's mixed with sourcream.Very nice as well.

Oh yes grated carrots are a delightful addition to club sandwiches.
Nasturtian leaves and cucumber are a nice combo also.

Butter both the outsides of a whole club sandwich. Either grill or panfry each side til golden and crispy.Cut into four triangles.
Leave crusts on.yummy in golden butter.

Voila! Monte Cristo.

we made 10 loaves of sammys last weekendfor 21st and the trick was home made mayoand cheese and onion with egg together ,they were still yummy 3 days later.

mashed salt pepper tumeric and finely chopped red onion
mashed salt pepper dry mustard powder and mayo
