We have an 11 year old who gets food off others at school. I thought if I gave him some nice homecooked but healthy things to take to school this might help control this. I appreciate any ideas. He likes pretty much anything.

Chocolate crunch ...
160 g butter (melt this and then add the rest) 1 C flour 1 C coconut 1/2 C brown sugar 2 T cocoa 1 C rolled oats 2 T golden syrup 1/2 t baking powder handful of dried fruit (cranberries are awesome, but anything will do)
Mix well then microwave on High for 1 min, stir then repeat twice. Press into a greased flat bottomed container and cook on high again for further 2 mins. You can ice this if you want.

Cheese Puffs ...
1 C flour 2 t baking powder 1/2 t salt 1 egg 1C milk 1 C grated cheese
Fill mini muffin tins 1/2, then add a tsp of tomato relish or cream cheese if you want, then top with more mixutre.
Cook at 200 deg C for 10 mins near top of oven

ANZAC Muffins ...
1 C flour 1 t baking powder 1 C brown sugar 1 t cinnamon 1 C coconut 1 egg 1 C milk 1 C grated apple
Sift flour, add sugar and cinnamon, stir in oats and coconut. Make a well in the centre and pour in apple and milk mixed together. Spoon into greased muffin tins and bake for 20 mins at 200 deg C

Make up a batch of his favourite muffins. Wrap each separately in plastic wrap and freeze. Very easy to just grab 1 or 2 in the mornings.

I wanted to make the muffins tonight while the ovens hot. looks like darlingmole isn't round at the moment. just searched, and it's 1cup of rolled oats.

Found this recipe online http://www.bestrecipes.com. au/recipe/Anzac-Muffins-L4543.htm l I think it is the same one for Anzac muffins with 1c of Oats added to it. Off to try it out now before the kiddies wake.
