Hi, jane38, if you type " corned beef " in the search box on the left of your screen, choose " anytime " as the date posted option then hit search you will be overwhelmed with pages of posts about corned beef. You should find plenty of suggestions in there.

cold corned beef is awesome in sandwiches. . on it's own or with a little pickle, mustard and/or cheese :p
it's also really good in fritters
