CARROT CAKE

1 Cup Wholemeal Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Salt
1 teaspoon of Cinnamon
1 teaspoon Mixed Spice
1 teaspoon Ground Cloves
1 teaspoon Nutmeg
2 tablespoons Diced Dried Apricot
1 tablespoon Pumpkin Seeds
¾ cup of Brown Sugar
2 eggs
1/3 cup oil ( I used olive)
½ teaspoon Vanilla essence
1 cup Grated Carrot
120grms Crushed Pineapple (Drained)

Pre heat ovento 175 degrees C
Mix all together and cook in 8” round tin for 35 minutesat 175 degrees C

When cold ice with cream cheese icing

2 cups Icing Sugar
1 Tablespoon of Lemon Juice
1 Tablespoon of melted butter
125 grms Cream Cheese (Traditional) don’t use spreadable as the icing will not set.

Mix together and decorate with finely chopped Dried Apricot and Pumpkin Seeds.

BEST EVER CARROT CAKE
1/3 cup oil
½ cup white sugar
½ cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ cup flour
½ cup wholemeal flour
2 eggs
1 ½ cups grated carrot
150 gms crushed pineapple
2 tbsps walnuts, chopped

Blend, oil, sugars and eggs and beat well. Fold in dry ingredients, then carrots, pineapple and walnuts. Bake 30-40 minutes. Moderate oven

CREAM CHEESE FROSTING
150gms cream cheese
1 cup icing sugar
2 tbsps butter
1 tsp vanilla
1 tsp lemon rind or 1 tsp lemon juice

Beat until light and fluffy. Frost cake, then scatter chopped dried apricots and walnuts over the top.
