What's your fav soup recipe?

Mines pea and ham soup with the bacon hock, and heaps of extra veges like celery, carrots. My mother used to call it 'Goodness Soup' yum yum!

Either potato , leek and bacon or my mams chicken and corn chowder.

Pumpkin Soup.
2 kg peeled pumpkin
2 medium chopped onions
2 tsp chicken stock
handful of parsley
2 tsp salt 1 tsp pepper
1 tsp of a good hot curry powder, [medium hot would be fine]
cover with water and bring to simmer
simmer untill cooked.
Use a stick blender to mush up.
Should be thick, hot and tasty.

Lentil or Pea Soup - I have only ever used lentils.

500g lentils (green or brown) or split peas - wash and sort
8 cups water
1 cup chopped celery
1 cup chopped onion
1 ½ cups chopped carrots
¼ tsp dried thyme
1 pinch cayenne pepper
1 bay leaf

Put all ingredients in a large pot and bring to the boil. Reduce heat and simmer covered for 40 minutes until lentils or peas are tender.

Puree the soup with a stick blender until it reaches the consistency you like (either smooth or lumpy isOK). Add pepper and salt to taste. Reheat to boiling point. Can be served with sour cream.

I got it from the internet and like it because it's so straightforward. It is probably *not* the most attractive soup you will ever make.
