I trawled through the recipes on the lentil threads already but none match what I am looking for. Has anyone got a good recipe?

Lentil & Ginger salad. 4T e. v. olive oil, 2 garlic cloves, crushed, 2t gr. ginger, 1 onion, chpd, 225g lentils (brown or Puy), 550ml water, 1 red pepper, deseeded and chpd, 1T lemon juice, 3T chpd coriander or parsley, s&p Saute garlic, ginger and 1/2 onion 3-4 min. Add lentils and water and cook slowly until water absorbed (20 min), adding more water if nec. Remove from heat, add rest of oil and onion, red pepper, lemon juice, coriander, s&p. Serve at room temp. Havent tried this but looks good to me. Check under the vegetarian threads there may be something there that suits.
