What should I make with veal mince?

OOoh, my favourite Swedish meatballs which have a combination of minced veal, pork and minced steak. They have a beautiful creamy sauce and are served with rice.

Try these then.

Veal Patties:
500g minced veal;1/2 cup fresh breadcrumbs;1tsp grated lemon rind;1tsp fresh marjoram ( use dried if you dont have fresh) or use Rosemary 1/4 tsp. 1 tsp salt;1/2 tsp pepper; 2tbsp sour cream;1 egg;flour and 45g butter.

Mix veal, breadcrumbs, lemon rind, herbs, salt and pepper, sour cream and egg. Shape into 8 patties about 2cm thick. Heat butter in a heavy based pan and brown patties on both sides, then turn heat to low and cook gently about 5 mins each side.
Add butter (1 tbsp) and one finely chopped onion to pan and cook till onion is slightly browned. Add sour cream (1 cup) and heat slowly, stirring in all the brown bits from pan. Do not allow to boil. Season with salt and pepper and a pinch of nutmeg.
