Hi, I've got a couple of recipes for Banana Fruit Loaf and Carrot, Ginger and Lemon Cake. Would you like these recipes?

yes please. Am experimenting with a chocolate cake at the moment in my slow cooker. Used the roasting pan choc cake recipe I found on here but have halved the liquid so hopefully it works.

Banana Fruit Loaf - 150g sugar, 130g mixed dried fruit, 250 ml strong Earl Grey tea (hot), 1 tablespoon butter or margarine, 1 teaspoon baking soda, 1 egg (beaten), 2 small ripe bananas (3/4 cup) mashed, 1/2 teaspoon ground nutmeg, 1/2 teaspoon mixed spice, 260g plain flour, 2 teaspoons baking powder. Preheat the cooker for 20 minutes. Lightly great the sides and line the base of a 6 cup capacity casserole dish with non-stick baking paper. Combine the sugar and dried fruit in a bowl and pour over the hot, strong tea, stir in the butter and leave to cool a little. Add the baking soda, egg and the mashed banana and mix well. Add the sifted dry ingredients and stir briefly, just enough to combine. Spoon the mixture into the prepared dish and cover tightly with foil. Place the dish on a trivet (3 $2 coins are perfect). Pour enough boiling water into the slow cooker to come half-way up the sides of the dish. Cover with lid and cook in a Crockpot/Slow Cooker on High for 3 - 3. 5 hours. Lift the dish out of the cooker. Remove the foil and allow to cool for about 10 minutes. Loosen edges with a knife and invert the loaf onto a cake cooler and allow to cool completely.

Carrot, Ginger and Lemon Cake - 60g raisins, 1/4 cup lemon juice, 120g plain flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 100g wholemeal flour, 170g raw sugar, 250g grated carrot (grated weight), 100g crystallised ginger chopped, 2 eggs (beaten), 3 tablespoons canola oil. Pre-heat the cooker for 20 minutes. Line the base and sides of a 20cm straight-sided casserole dish with non-stick baking paper. Place the raisins and lemon juice in a small bowl, stir and leave to soak. Sift the flour, baking powder, baking soda and cinnamon into a bowl. Add the wholemeal flour and stir well. Combine the sugar with the grated carrot, stir in the ginger, eggs, oil, raisins and lemon juice. Pour the sugar and carrot mixture into the bowl with the sifted dry ingredients. Mix together well. Spoon the mixture into the casserole dish and cover tightly with foil. Place the dish on a trivet (3 $2 coins are perfect) in the cooker. Pour enough boiling water into the cooker to come about half-way up the sides of the dish. Cover with lid and cook on High for 3-4 hours in either a Crockpot or Slow Cooker. Lift the dish out of the cooker. Remove the foil and allow to cool for about 10 minutes. Slide a knife between the sides of the dish and the cake to loosen it and turn out onto a cake cooler and allow to cool completely.

Lemon Icing - 1 3/4 cups icing sugar, 2 tablespoons lemon juice (approx), crystallised ginger, finely chopped to garnish. Mix the icing sugar with enough of the lemon juice to make an icing of spreadable consistency. Smooth the icing over the cake and sprinkle with the chopped crystallised ginger.

Please let us know how it comes out. Have you cooked the cake directly in the crockpot or put it in a cake tin first?
