Do you any intolerances as well as gluten? A lot of gluten intolerant people also cant have dairy, vege gums, nuts etc?
Yes, rice pudding is a good one, made with Lactose free milk or goat milk if you cant have cows milk :)

I need a sponge top to go on a hot fruit pudding. I make a lovely light sponge using wheaten cornflour, but I can't for the life of me make it work with maize cornflour. It always takes twice as long to cook and still sinks in the middle. This is for a family where 2 members have coeliac disease, so I can't use any flour containing gluten.

What I'd prefer is to make a separate sponge and then lay it on top so I don't have the extra worry of it sinking soggily into the fruit.

Craisin Upside-down Pud
spray oil
1 TBLSP each: butter, brown sugar
1/2 cup craisins
2 eggs beaten
1/4 cup each: canola oil, water
1 cup wheat & gluten-free baking mix
Preheat oven 180, spray four small ramekins with oil.
Mix the butter and brown sugar together and place in the bottom of the ramekins, add the craisins. Mix eggs, oil and water together in bowl, add the baking mix and combine well. Pour this mixture over the fruit in the ramekins. Bake for about 15 mins or until a skewer comes out clean. Serves 4
