They say don't use almond meal because in the usa almond meal is very coarse, not like our ground almonds. They say almond flour when they want a fine grind.

You could use sunflower seed meal as well instead of almonds. I use a coffee grinder to make the meal and then sieve it and any bits that don't go through the sieve then it goes back into grinder.

I made this one a couple of weeks ago, had left over lemon curd and meringue and made a couple of mini pies, it seemed to turn out ok - considering I didn't really know what I was doing! https://alittleinsanity.com/gluten-free-pie-crust-recipe/ Worth a go.

1 cup gf flour 1/4 t baking powder 1/2 t salt 60 g butter cold cut into small cubes 1 c grated tasty cheese 1 c cold mashed potato( no milk or butter) 1 egg white
Place flour bp and salt in food processor ans whiz until combined add butter then cheese and process untill fine breadcrumb stage Add potato and egg white and process until it comes together Roll out on silicone mat or between plastic or baking paper of press into tin. cook at 180* approx 12 - 15 min
I also roll this out a little thicker and cut out into circles for scones. it is delicious. esp with a bit of blue cheese added.
