I want to cook a Courgette Cheese Pie recipe from an Annabelle White book and it calls for 1 cup of baking mix from supermarket. NW have Scone Baking Mix or Sweet Baking Mix and I can't imagine I should use either of those in what seems almost like an Ímpossible Quiche' recipe. Any suggestions as to what I could use instead please?
Thanks so much, that looks like it will do the trick.

I've always wondered what was in those mixes other than flour
