“Porridge Buns Hi, wow - took me about half an hour to skim through all these messages and I couldn't resist adding a fave little recipe of my own - actually I am surprised that I beat bams1 to adding it, after all, I'm pretty sure I got the recipe off her in the first place - isn't that right Mum! Porridge Buns 1 cup cold porridge, 1/2 cup sugar, 2 cups flour, 2 tsp baking powder, 1 egg, 1 Tbl butter, milk. Beat eggs and sugar, add porridge, then butter, flour and baking powder. Add milk to make stiff dough. Drop on oven tray in spoonfuls and Bake 180 degrees for about 15 minutes (if you make them as big as I do they can take about 1/2 hour).
These are yummy, easy, and fool proof. I've found them really nice by adding raisins and cinnamon, or feij

the best Sugar Buns
1 1/4 cup flour, 2 tsp baking powder, 1/4 cup custard powder, 1/2 cup sugar, handful of sultanas, 60gr melted butter, 1 lightly beaten egg, a few drops of lemon essense, approx 1/4 cup milk, a few tsp jam.
Place sifted dry ingredients into med bowl. Add sugar and sultanas and give it a bit of a stir to combine. Make a well in the centre and mix in melted butter, egg and essence. Most of it should come together into a ball but don't worry if it doesn't - it'll be okay! Slowly stir in the milk. (Adjust quanity if you need to - the mix should hold its shape when it is scooped up, ie: not sloppy.) Using a tablespoon, scoop out onto a baking paper lined tray. Place a small blob of jam on the top of each and a sprinkle with sugar. Bake at 180 for about 15 - 20 mins. Test by lightly touching the tops - should be firmish and lightly browned. Makes 7-8 buns.

2nd RECIPE 3 Cups flour, 1 cup sugar, 2 eggs, 2 heaped teasp baking powder 4 oz butter, sultanas Milk to mix to a stiff dough sprinkle with sugar on top and bake at 375 so 180 - 100?)
In the days where everyone baked and knew the routine instructions were less detailed. Remember them from when little and yes they are YUM. Happy baking.

Aren't these also called" Rock cakes" ?

use a recipe my late MIL had called DAD's sugar buns- 2 cups flour 2 teaspoons B Powder 6 oz butter (175 gm ) 6 oz sugar " '' milk to mix 6 oz sultannas ( i use cranberries ) 2 eggs cream B & S add beaten eggs,beat again,add sifted flour and BP,add fruit, then enough milk to make a dropping batter drop spoonfuls on cold greased tray bake 180 10 minutes
