Only recipe I can remember having is Edmonds cookbook's:
4 hard boiled eggs 40g butter 1 small onion, chopped finely 1 tablespoon flour 1 teaspoon curry powder (or more) 3/4 cup milk Salt to taste
Put butter in saucepan and sauté onion without browning it. sprinkle in flour and curry powder, cook for a few minutes, then gradually stir in milk. season with salt and cook till it thickens. Shell eggs, cut in halves, put in sauce and heat again before serving.
It was years ago I made it, and can't remember anything about it, except I should have read the recipe beforehand, as I was wanting stuffed eggs lol (still not sure how I didn't figure that out hehehehe)

Instead of milk use best foods mayo and chopped up spring onion. So tasty. If you were using it cold.

I make one using a curry paste. making the paste is time consuming but you could use a nice red curry paste. Will post the curry recipe if you want but the Edmonds one is what my mother used to make and its insipid and looks horrible.

This egg curry is delicious and very simple to make.
8 eggs, hard boiled, peeled and halved lengthwise 2 tab ghee or butter 2 onions, finely chopped 2 tab coriander leaves, chopped 2 tsp salt 1 tsp turmeric 2 tsp desiccated coconut 1 tsp garam masala 1/2 tsp chili flakes 4 tomatoes, sliced 2 tab plain unsweetened yoghurt
Heat the ghee in a wide saucepan, add onion and coriander and cook gently until soft and pale gold. Add turmeric, salt, coconut, chilli and garam masala, mix well and cook 2 minutes. Add tomatoes and yoghurt, combine gently. Place eggs on top with yolks up, carefully spoon the sauce over the eggs, cover and simmer 10 minutes.
Serve hot.
