I regularly buy this salad which is made fresh in the Deli of NW.
Has anyone made a recipe similar - I'm just not sure what dressing to use.

The 1 at our NW seems to be a basil pesto. Is that the same as yours?

Yep - easy enough to create something similar - stir pesto through rissoni pasta while still warm. Thinly slice chorizo and fry until crisp. Add to pasta and chill then add finely chopped spinach or parsley and either finely diced capsicum or cherry tomatoes without the seeds. I always add some feta too while it's still warm - very tasty

Thanks sarahb5 - you're a star! I'm so useless in the kitchen but have decided to try and make one new thing a week. I thought I could make this salad instead of buying it . now I'm actually looking forward to making it!
