Tomato Relish microwave (no capsicans Please)

I have just picked 2 basket full of tomatoes .I would be greatfull if anybody has any other recipes that can be cooked in the microwave. Thank You

Microwave Italian Relish - Makes about 3 jam jars
500g tomatoes (5 large)
500g cucumber (1 large or 2 small)
1c finely chopped celery (about 2 ½ stalks)
150g onions (1 large)
1/8c salt
2c boiling water

1 ½ c sugar
1c vinegar
1 Tbsp mustard
2 Tsp curry powder
3 rounded Tbsp flour
Bowl 1
Peel & chop tomatoes, leave overnight
Bowl 2
Peel & chop celery, onions & cucumber
Dissolve salt in bowling water & pour over & leave overnight
Next morning
Drain off liquid. Rinse off brine.
Mix ½ cup vinegar with the sugar
Mix ½ cup vinegar with the dry ingredients
Microwave vinegar and sugar until sugar dissolved in a 2L jug. Add remaining ingredients and microwave on HIGH until boiling.
Microwave on HIGH 5 minutes, stir, then HIGH another 5 min.
Bottle as usual (I use pop tops so they seal)

3 kg tomatoes
9 medium onions
2 tbsps salt
750g sugar
750ml malt vinegar
1 Tbsp mustard
1 Tbsp curry powder

I freeze the tomatoes first, then squeeze out excess water.
Chop the lot in a blender and then throw it all in a pot except the sugar.
Cook for a while - to reduce a bit.
Then add the sugar and cook again for another 20 mins or so.

If it's still a bit runny, use cornflour to thicken a bit.
I like simple.
You can adapt for microwave, same process, less cooking time.
Put into sterile jars.
