Hi, I am away from home (ie recipe books) and typing up a recipe to include in a recipe compilation for a friends birthday. I need to convert 250g caster sugar into cups as I think this would be an easier measurement to work with. Can someone help me please? Will happily post the recipe for the easiest peasiest Citrus Cream dessert if someone will help :)

250g caster sugar = 1 standard cup, unicstudent. Looking forward to the recipe.

Oh, thanks a million! ! Here's the recipe:

Citrus Cream

4 lemons, juiced and strained
1 cup castor sugar
500 ml (2 cups) cream

Bring lemon juice to boil and reduce by half to intensify flavour.
Bring cream and sugar to boil, stiring to dissolve sugar. Simmer slowly for 3 minutes.
Whisk two mixtures together and pour into 6-8 individual ramekins - china cups on saucers are a pretty touch.
Chill till set.
Garnish with toasted almond flakes/toasted coconut/grated white or dark chocolate/slice lemon and mint leaf.

Sooo easy, but really tasty! A lovely light, fresh flavour, nice after a heavier meal.

I hope you enjoy it.

Thank you for taking the trouble to post that, unicstudent. It's actually a very old recipe usually called Lemon Posset and as you say makes a really lovely refreshing dessert.
