I make this and its delish!
Easy Lamb and Filo Pie Serves 4-6 Ready in 50 minutes 1 tbsp oil 1 onion chopped 1 carrot finely chopped 2 stalks celery finely chopped 3 cloves garlic crushed 500g lean lamb mince 1 tbsp chopped rosemary 1 tsp dried thyme 1 410 g can Italian seasoned tomatoes or plain chopped tomatoes – add some pesto or mixed herbs ½ cup mushrooms sliced 1 tbsp plain flour 1 3/4 cup beef stock salt and pepper 25 g melted butter or 1 ½ tbsp oil 8 sheets filo pastry Pre heat the oven to 200 ° Heat the oil in a frying pan and gently cook the onion and garlic, celery and carrots and mushrooms with the rosemary until tender. Add the meat and cook until brown, then pour off any excess fat. Stir in the flour then add the stock and tomatoes. Simmer gently until thickened. Season with salt and pepper. When the filling has thickened pour into an ovenproof dish or casserole. Brush each sheet filo with lightly with butter or oil and crumple on top. Bake in the preheated oven for 35 minutes or until golden.
