A nice Red Sauce.
Put all the ingredients into a preserving pan 3 kg ripe tomatoes 1 & 1/2 kg over ripe gala apples [added just to use them up] 1 & 1/2 liters of malt vinegar 750 mils of cider vinegar 1/2 kg of onions 3 Tbsp crushed garlic [out of a jar] 3 Tbsp plain salt 1 Habanero chili 1 tsp ground cloves 1 tsp ground black pepper 1 tsp ground ginger 1 tsp ground mace 1/2 kg of brown sugar 1/2 jar of jam needed to be used it's as old as I am. It is hot but not over the top,
Simmer for two hours. Put through a mouli to remove the seeds.

Simple one we do. We usually do 5-6 kg of tomatoes at a time. Makes about 3-4 750ml bottles. 1kg tomatoes 1 cup sugar 1/2 tablespoon salt small teaspoon allspice 1 cup malt vinegar Chop up tomatoes a bit. Throw everything in a pot and boil down to about 1/3 . We use a stick blender to blend it up. A mouli would probably work as well. Continue to boil until the consistency you want. Leave until cooled (usually overnight) and pour into clean bottles/ jars.
