im thinking feta, pumpkin, kumara, red onion, red capsicum, but not sure what else - especially stuck on the dressing. Have googled, but prefer tried and true... many thanks

Try oneof those chunky dips from the supermarket as the dressing. Try the pesto one with the pinenuts it is lovely stirred through roast veges especially with the feta cheese crumbled over the veges. You are on to a winner!

Roasted vegetable Salad With Sour Cream & Red Onion Dressing

600g Red Kumara
600g baking roasting potatoes
600g carrots

Seasoning:
2 tblspn olive oil
2 tspn crushed garlic
1 tspn rosemary - fresh (chopped) or dried
1 tspn cumin seeds
1 tspn yellow mustard seeds
salt & pepper

Dressing:
1 cup sour cream
2 tblspn whole grain mustard
1⁄2 medium sized red onion, fi nely diced
fl at leafed parsley, chopped
salt & pepper to taste

Pre-heat oven to 180ºC.

Cube the vegetables leaving the skins on and combine with seasonings in a roasting dish.

Bake for 30 minutes or until golden and tender. Cool.

Combine dressing ingredients and stir through cooled vegetable mixture

That recipes sounds great cookessentials , I have just butterflied a chicken (albeit the wrong side! ) and may make this to go with it, with some homemade focaccia.

This Food in a Minute Recipe is a tasty one; can add potato & zucchini too.

Ingredients

1 onion, sliced
4 cups vegetables cut into 3 cm dice. Mixture of carrot, parsnip, pumpkin, swede or kumara
1-2 Tbsp oil
350g pkt Free Flow Spinach (or fresh, finely shredded)
135g pottle Mediterranean Sundried Tomato with Cashew & Parmesan Chunky Dip
100g feta cheese, crumbled

Preparation time: 15 minutes
Cooking time: 40 minutes
Serves 4-6


Method

1. Preheat the oven to 200°C and line a baking dish with baking paper.

2. Place the onion and vegetables on the tray and toss or spray with oil. Bake in the oven for 40 minutes. Remove from the oven and sprinkle over the frozen Free Flow Spinach and return to the oven for a further 10 minutes.

3. Toss through Mediterranean Sundried Tomato with Cashew & Parmesan Chunky Dip, season with pepper and place in a serving dish and sprinkle with feta. Serve as a vegetarian main meal or as a vegetable side dish.
