Easy crockpot Tomato Soup. Ripe Tomatoes, 2 onions, 2-3 cloves garlic, 1 tsp salt, 1 tablespoon sugar, 2 tablespoons tomato paste,2-3 beef or veg stock cubes crumbled, 1 tablespoon wine vinegar, few fresh herbs. Good pinch curry powder, 3-4 bay leafs.Slice bread pulled into pieces Turn crock/p on high to heat, Skin tomatoes by pouring boiling water over them and peel skins off. Fill up crockpot with tomatoes, add chopped onion, crushed garlic, salt, bread, sugar,Tomato paste, stock, vinegar, curry powder. Lid on and cook on high. 1/2 way through cooking squish tomatoes down with a potato masher. When done remove bay leaves, puree with blender till creamy, add your freshly chopped herbs, cool and freeze in containers. Soup is nice and thick and tasty. If you want thinner soup when reheating add a dash of cream or sour cream, serve sprinkled with a little chopped parsley on top.

This is the one I have made for the freezer, really yum.
Garden Fresh Tomato Soup. 4 cups chopped fresh tomatoes, 1 onion sliced, 4 whole cloves, 2 cups chicken stock, 2 tablespoons butter, 2 tablespoons all purpose flour, 1 teaspoon salt, 2 teaspoons white sugar or to taste. In a stockpot over medium heat, combine tomatoes, onion, cloves and chicken stock.Bring to the boil and gently boil for about 20 minutes to blend flavors.Remove from heat and run the mixture through a food mill or colander catching juice in a large bowl underneath.Discard any skins or pips. In the now empty stockpot, melt the butter over a medium heat.Stir in the flour to make a roux, cooking until the roux is a medium brown.Gradually whisk in a bit of the tomato juice so that no lumps form, then stir in the rest. Season with sugar and salt, adjust to taste.
