Chillies,what to do?

I,ve got a chilli plant in the garden full with red chillies,but notice they are starting to go soft.How do i go about keeping them for later use!

If they are thin-walled you can dry them, if they are fleshy freeze them.

A wide-mouthed clip top glass jar, stuff them in, fill with a good dry sherry, will keep for ages and are great for cooking.Store in a cool dark place.

Thank you,they are thin skinned so looks like the drying method plus the sherry it is.many thanks to you both

Hi,
We pick ours and store them in the hot water cupboard on newspaper turning them after a few days. After a fortnight gather up and store in an open container in the hot water cupboard. They are still good after several years. We use them for casseroles, stews and Asian cooking. Remove seeds and finely slice before use.
