Up to a week in a plastic bag in the fridge. Longer term straight in the freezer as fisher pointed out.

Just freeze them. There is little difference once thawed. At the end of the day it is what u want to use them for. Otherwise, get dried chillies or in powder you literally get the same kick in comparison but the latter is more versatile in usage.

You can also dry them.I just leave our home grown chillies in a bowl on the bench and they dry out over a few weeks.Or if you have a lot thread them on to coarse cotton thread and make a garland to hang up somewhere- they will dry out and keep until next season.

I de-seed and dry in dehydrator...the heat intensifies 4 fold when then processed into granule form...
