Made this today. It is from the Edmonds microwave cookery book ( small size, silver front cover, ring bound)
125g butter, 1 cup castor sugar, 1 t vanilla essence, 3 ripe bananas, 2 eggs, 1 t baking soda.1/4 cup warm milk, 2 cups flour, 2 t baking powder, icing sugar
Cream butter, sugar and vanilla essense together until soft(sorry!). peel and mash the bananas.Lightly beat the eggs. Combine the bananas and eggs. Add the banana mixture to the creamed mixture. Dissolve the soda in the milk. Add to the banana mixture. Sift flour and baking powder together. Fold into banana mixture, mixxing well. Lightly grease a 20cm microwave ring mould. Pour batter into prepared pan. Cover with a paper towel. Cook elevated on Hi for 7 to 8 minutes or until cake looks just set on top. Allow to cool slightly before turning out onto a cooling rack. When cool dust with icing sugar.
