2 cups warm water, 1 tsp ginger, 1 tsp sugar, 1 tsp dried yeast.
Mix warm water with ginger, sugar and yeast in glass jar and cover.
Feed this bug with 1 tsp ginger and 1 tsp sugar each day for seven days.
To make up
Dissolve 2 cups sugar and 1 cup boiling water then add 12 cups water, juice of 2 lemons and the fluid off the bug.Bottle and seal.Start the bug off again with water, sugar and ginger.

Did this two weeks ago.Letting the gas out everyday as its super fizzy. Must be ready soon.

to start the bug
preserving jar
warm water
Add 2 tsp of active yeast,
2 tsp of raw sugar
2 tsp of ground ginger

Fill a preserving jar ¾ full with warm water. Add yeast , sugar and ginger.
Keep the jar sitting on the kitchen bench

feed it every day with
1 tsp raw sugar and
1 tsp ground ginger

after one week
3 cups of raw sugar
2 tsp cream of tartar
1litre of boiling water and 5 litres of cold water.
juice of 2 lemons (through a strainer)

In a large bowl, put sugar and cream of tartar, then add boiling water first, cold water next. Add lemon juice.
The jar of bug will have sludge in the bottom and liquid on the top – pour the liquid part into the bowl. Stir and pour into 5 well rinsed /sterilised bottles. Write the date on the lid and wait two weeks before drinking. Open carefully especially if the bottle is hard.

With the leftover bug in the preserving jar, fill the jar with water and throw half away or give to a friend. Fill back up to ¾ full and start feeding again

This is easier & quicker in my opinion!

Ginger Beer in a Bottle

Take a 1 litre ora 1.5 litre plastic bottle.

Fill half way with warm water.

Use a funnel & add 1/4 teaspoon baking yeast

3 teaspoons ground ginger

1/2 teaspoon cream of tartar

2 tablespoons lemon juice

1 cup or less of sugar (I only use 1/3rd of a cup)

Fill bottle to nearly full leave gap.

Put lid on & shake well.

Leave on bench in kitchen for 24 hours.

Then refrigerate.

Slowly release cap before opening.

Enjoy!

I Make two bottles at a time.One for drinking & one in fridge on stand by.

For my Ginger Beer I use plastic bottles as stated in recipe

if anyone else has made the top recipe, can someone please tell me if i need to mix in the suger/ginger im feeding the bug,
i havnt been and arnt sure if i should be.

No - you don't need to mix it.You can tell if the bugs working by little bubbles rising to the surface.Remember to split the bug in half after each bottling as well. Either discard it or make up a new one to give away.
