Where do I buy skirt steak from?

I can't see it in the supermarkets anywhere. Do I have to go to a proper butcher! I'm in Auckland/North Shore. Thanks

Ask at the butchery counter at the supermarket for some,if they do not have some, they should be able to save some for you. They often use it ( and other meatfor sauages,( what a waste ),a great stewing steak. You could ask at a butchers as well.

The Aussie Butcher sometimes has skirt, otherwise any properly trained butcher will know what it is and be able to supply it.It's a great cut for braising.

Thanks. I've heard its good (and Cheap) on the BBQ if marinaded and cooked hot and fast. Will ask at supermarket.

If you intend to marinate and grill skirt, make sure you get the thick end.It is very tough and needs several days in an acid marinade, then needs to be cooked hot and fast, rested well and sliced very thinly across the grain.
