Uli yes I heard it's toxic 2 so am going 2 stick 2 using my own smoked home made sausages. Even certain smoked foods have some questions made about them. Karenz the cabbage is lovely in this isn't it. Did it steam cook just as nicely w/out the stuffing crust? Your wild pork seems like a delicious idea. The stuffing on top is another way to keep the steam in, like edible earth, like real hangi. I had to resize my last chicken 2 make room 4 the stuffing & even then had 2 weight down the lid til everything had shrunk down w/ cooking.

It did steam nicely with just the cabbage but I think it would have cooked a lot faster if I had had room for the stuffing, I think this week I will just put it on earlier to make sure. I made bacon a few weeks ago using an old electric frypan with manuka sawdust in the bottom, put it on the lowest setting for 8 hours.

Used a pork belly and a dry rub of crushed juniper berries, thyme, peppercorns and cloves with brown sugar and pink salt. Made incisions in the pork all over and rubbed this well in and kept covered in the fridge for 4 days. Next time I will use maldon smoked salt and see how that goes.

Yes, juniper berries! I think that's what Peta Methias oven hangi recipe had in it besides some already smoked sawdust, charcoal & steralised earth. Thanks! BTW: Your dinner's got me hungry 4 a pork hangi.

Did the wild pork version and it was very tender, put a couple of cast iron pots on top to weight it down and it cut the cooking time down.

bumpity bump Putting mine on now. I have a huge crockpot (8 litres! ) so I hope I can fill it enough. Am about to make the stuffing for the topping. Does it have to seal?

Made this tonight and it was sooo nice and l used tinfoil to seal it and we took off some of the juice when we turned it down 1pm and reduced that to make an awesome gravy. Will make it again with more vegies and will get some watercress

My first This is my first time ever even looking on a message board. I found this idea yesterday and thought that I would give it a go. I have done once before a hangi in a Kai cooker so thought that it could work(may be lol. . lol). Did as described above taking everyone comments on board. Lose Crock pot lid, so after placing everything in I placed a teatowel over the top then placed the lid on top, adding a cast iron skillet on top. Have now taken off the skillet smells FABULOUS... . Will know in 1 hour... ... Thank you so much for all the input everyone has had. For a newby like me it shows that message boards are worth checking out.

Binn Inn smoked essence ? ? ? ? I purchased a small bottle of Hickory smoke flavour from Binn Inn for $6. I was going to use it but didnt particularly like its strong smell. This essence is used for brewing your own spirits so Im unsure if it can be used for a crock-pot hangi. Has anyone tried this ?

Yes Mars I'm hooked too. Hope it was delicious for you. Don't know about the Binn Inn stuff, sorry James. Someone here posted they only need a few drops of liquid smoke in an old icecream container of water & you dip the vege into the water before popping them into the crockpot. I've not bothered b/c my brother complains about adding "chemicals". Let us know how you get on please.

Ive tried this useing pork. I put spuds and pumpkin on bottom. Then pork. On top of the pork, I rubbed with a bit of olive oil, salt and crushed garlic. Then I cut off the skin of a bacon hock and cut into strips, laying them over the pork. Chucked some sliced carrots around the side and a double mixture of chicken stuffing over the top. Then I roughly chopped some cabbage and spread over it all. I then convered it with a teatowel and put the lid on. I cooked on high for 3 hours and then low for 4. It was perfect. Ive just bought some Hickory Smoke from Binn Inn and will try this next week...

100 years ago my dad used to play rugby for alliance freezing works in Invercargill, after every game there was a hangi and that was the highlight of the Sunday, I never use to go to watch dad it was always for the hungi! Unfortunatly now they dont seem to be as common and sometimes they can be used for fundraising but would love to see more of them! Am going to NW today to get a chicken and will cook it on Saturday for tea cant wait many thanks for recipe!
