Does anyone have a recipe for Pumpkin Soup please. I have browsed the recipes on here and cant seem to locate one.

Thai Pumpkin and Kumera Soup.Alison and Simon Holst.. 1 onion chopped,2 teaspoons cooking oil,1-2 teaspoons red curry paste, 2 cups vegetable OR chicken stock,( or 2 teaspoons instant stock powder and 2 cups water) 300g de seeded skinned pumpkin, cut into about 6 chunks,300 g orange flesh kumera peeled and thickly sliced,1x 400g can lite coconut cream,salt and sugar to taste,chopped coriander or spring onion leaves to garnish. Turn S/cooker on to high to heat up, coat inside of bowl with non stick spray. Cook onion in a frying pan in the oil till transparent.Stir in the curry paste Add about 1/2 a cup of stock and stir the mixture over a low heat until the curry paste is mixed through.Tip the onion and curry paste into the slow cooker and add the rest of the stock. Add the pumpkin and kumera Balance the flavours by adding a small amount of sugar if desired. Lid on and cook on high about 5 hours or low about 8 hours till vegtables are tender. Puree the soup with a stick blender or do in batches in the processor add as much coconut cream as desired and mix it in well. Taste and add salt if necessary. Serve immediately and sprinkle with the garnish of coriander or spring onion leaves, serve with toasted rolls,toast, or poppadoms etc. Curry pastes differ in strength for mild add a smaller amount for hotter flavour add larger amount, and for a creamy low fat soup use evaporated milk flavoured with coconut, for a stronger coconut flavour add a few drops of coconut essence.
