I have made wine on and off for so many years, and never had a brew turn into vinegar. Now I brew wine, just to turn into vinegar. lol.
If your wine goes astray, that is an option, turn it into vinegar.

Can you sterilise the buckets etc with janola or do you have to buy the proper stuff !

with.kuaka. buy campden tablets. they will do everything for you, and they are easy to use. Good luck, I hope you post and pic, the progress for us.

I have to say, look in your paper or at the local information kiosk, for a phone number to connect with a wine club in your area. You will find the folk there only too glad to set you on the right track. They have competitions and get togethers to discus what they are doing and brewing, can put you in touch with equipment may even have a sales table for bits you could use.
I have just started my double malt vinegar, I will log progress on my blog.

Can I suggest using elderberry rather than the flower,Elder flower wine is very light and fragrant, but a nice red made from the berry is something else.

not much in the wine one, I am intending to make wine this year. Not sure yet what I will make it from. I made a very nice apricot and banana a few years back, I hope I can find my recipe book. I sort of feel sold it . lolbugga,but you never know.
