Here are a couple of cucumber relish recipes from my two grandmothers.
The second one was legendary amongst our whole family and we would leave her place clutching the jars.
Cucumber & Pineapple Relish 1 x 16 oz tin crushed pineapple (475g approx) 2 cucumbers diced 4 medium onions chopped ½ bottle white vinegar (leave some out for thickening) 1 T salt ½ lb sugar (250g) Juice of 1 lemon 1 ½ T cornflour ½ t curry powder ¾ t turmeric
Boil pineapple, cucumber, onions, vinegar, salt, sugar & lemon juice for 30 mins.Thicken with cornflour, curry powder & turmeric mixed with a little vinegar.
Nan’s Cucumber relish 1lb apples (455g) 2 medium peeled cucumber 1lb onions (455g) 2oz salt (60g) 1 pint vinegar ½ lb sugar (250g) 1 t cayenne pepper
Cut up apples.Cook in vinegar until soft.Add sugar, salt & pepper& boil for a few minutes.Cool.Mince cucumber & onion, strain juice.Add to apple mixture when cooled.Mix & Seal in jars.

masina6, try doing a search here on the Recipes MB using chutney as the Keyword and Last year as the Date posted option - you'll find numerous earlier threads re all kinds of chutneys with recipes, hints and ideas.
