Does anyone have the Jo Seager gingerbread men recipe please. It makes yummy soft gingerbread. I've checked her website and it's not there. I believe it was in one of her cookbooks. Thanks

Jo Seager's Gingerbread Cookie Dough
250g butter softened 1 cup icing sugar 1 egg ½ cup unsulphured molasses 4 cups flour 1 Tbsp cocoa 1 Tbsp ground ginger 2 tsp mixed spice 1 tsp baking SODA ½ tsp salt METHOD Beat the butter and icing sugar till light and fluffy. Add the egg then molasses and mix well. Add the rest and mix all together thoroughly. Divide the dough into 4 discs, wrap in cling film and refrigerate for at least 2 hours. Roll out to 5mm and cut into shapes. Bake at 180°C for 10 - 15 minutes.
