Totally free bikkie recipe

1 c. dairy-free margarine (like olivani)
1/2 c. brown sugar
1/2 c. sugar
1/4 c. soy milk or rice milk
2 tsp. vanilla extract
2 1/4 c. rice flour
1/2 tsp. salt
1 tsp. baking soda
12 oz. semi-sweet chocolate chips or chopped chocolate

1: Preheat the oven to 190°C.

2: If not using chocolate chips, chop semisweet chocolate baking bar into small chunks the appropriate size for cookies. Set aside.

3: Cream together butter and both sugars until light and fluffy. Add soy or rice milk, and cream. Mix in vanilla extract. It might look a little curdled, that is fine.

4: Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chunks or chips.

5: Drop by teaspoons on greased cookie sheets. Bake at 190°C degrees for 8-10 minutes. Remove from baking sheet and cool on racks

If you want to have plain ones, just leave out the chocolate. If citrus is allowed you can zest some peel into them as well. They are also good with orange zest and chocolate - Jaffa flavour.

I hope that helps - these are the only biscuits my friends son can have.

If you use the dark varieties of Whittakers choc it is dairy free - the plain dark varieties not the flavoured ones
