rEAL Vanillaheightens the natural flavours of fruits. Vanillasyrup is wonderful drizzled on just about anyfruit and on ice cream pancakes waffles fruit pies etc. You can get creativeand add other flavours to the basic syrup, such asCalvados, strips of lemon or orange zest, or perhaps try herbs such as basil or rosemary.

1-1/2 cups water,
4 heaped tablespoonswhite sugar,
2 heaped tablespoons crystalisedsugar such as Muscavado orDemerara
1 vanilla bean.
Plus a squeeze of lemon juice

Combine the water and sugar in a small saucepan , split the vanilla bean lengthwise in half. Scrape out the seeds and add the seeds and bean to the pan. Simmer over moderate heat for about 10 minutes. Add a good squeeze of lemon juice . Allow to cool. Store in a covered jar or bottle in the fridge fortwo weeks or longer ( put the remnant vanilla bean shell in too)
