mince will easily feed 5.
savoury mince, cottage pie, bolognaise sauce and have over either pasta or with the potatoes.
I'd keep the bacon for another day.

make a chowmein as long as you have noodles to cook in the pantry, that way you will maximise the mince and it will spread around the 5 of you wth the loaded fact of been full of veges, you can add the cooked bacon to it or for a different taste why not grill it and crumble it over the chowmein at the end

Chuck it all in a crockpot

the mince would feed seven, a big cottage pie with mashed potato on top cheese and sliced tomato on top to grill off.Keep the bacon for another nite to make pasta, with mushrooms and bacon sauce for it.

OP, you can also bulk up with baked beans.

Add oatmeal and veges to the mince and make a meatloaf.

My hubby won't eat mince calls it "trucker food" . He'd have the bacon!
