Easy Fruit Sponge Beat together2 eggs,1/2 cup sugar,1 tbsp water.Add 1/2 cup self raising flour and stir in.Spread over hot fruit and bake in mod oven.

Apple Sponge
3/4 cup water 3/4 cup sugar 5 apples 100g butter another 3/4 cup sugar 1 egg 1 cup flour 1 tsp baking powder 1/4 cup water
Bring first measure of water and sugar to the boil in a large saucepan. Peel and slice apples and add. Simmer for 20mins or until apples are tender. Beat butter, second measure of sugar and egg until creamy. Sift in flour and baking powder and mix well. Beat in 1/4 cup water until smooth. Pour hot apples into a greased 6-cup casserole dish and spread the batter on top. Bake at 180deg for 40min, then serve warm with cream or icecream. Serves 5-6 people.

Spiced Apple Sponge: 2 eggs, 1/2 cup sugar, 50g butter,1 cup self raising flour,1 tspoon mixed spice, 1 tspoon cinnamon.1/4 cup milk. In a medium sized bowl, beat the eggs and sugar till pale and creamy. Melt butter and add to the egg mixture. Sift dry ingredients and fold into the egg mixture. Stir in the milk.Spoon over apples. 200c for 25-30 minutes.This is nice over any fruit.

Lemony Apple Sponge Pudding Serves 8 4 large cooking apples, peeled 1/3 cup cold water Finely grated zest and juice of 2 lemons 1/3 cup sugar 125g butter, softened 1/2 cup caster sugar 1 egg 1 cup flour 2 teaspoons baking powder Icing sugar, to dust
Quarter apples, remove cores and slice flesh in wedges Place sliced apples, water, lemon juice and 1/3 cup sugar in a saucepan Simmer for 5 minutes until apples are tender Spread cooked apples in a deep sided oven dish Preheat oven to 180C Place butter and 1/2 cup caster sugar in a bowl and beat until pale and creamy Beat in egg and stir in lemon zest Sift flour and b aking powder over creamed mixture and stir to just combine Place spoonfuls of mixture over apples - the mixture is thick but will spread during cooking to cover apple base Bake for 40 to 45 minutes or until sponge springs back when touched Dust with icing sugar

Quick, Easy & nice (no butter) 2 eggs,3/4 cup sugar well beaten,add 3/4 cup flour & 1 teaspbaking powder.Pour over hot fruit bake 190 degrees about 20 minutes.

Ive been looking for a good apple cake recipe for some time, and this one has been handed along from person to person, and highly recommended. I havent tried it yet, will do so soon though.
Spicey Fresh Apple Cake (20cm sq or round tin)
200gr butter, softened 1 cup sugar 3 eggs 150gr yoghurt (plain or apple flavours) 3 cups of chopped apple, peeled and cored (these can be quite big chunks as they are nice to come across when eating the cake) Juice and grated grind of 1 lemon 2 cups flour 3 tspn baking powder 1 heaped tspn cinnamon (can add mixed spice too if wanted)
Mix butter and sugar til creamy. Add eggs and mix well Mix in yoghurt, fruit, lemon juice and rind, flour, baking powder, cinnamon (and mixed spice if using). DON'T OVERMIX, just loosely combine. Pour into well greased and baking paper lined (at least on the bottom) 20cm cake tin. Bake 180 degrees Celsius for 55-60 minutes. Cool on a wire rack. Serve dusted with icing sugar
Also works will with fresh apricots, peaches, nectarines, and plums.
